Period changed to Dash and Space (iOS 14.7)

I type period and it changes to dash and space. 

I type this: [THIS IS A TEST.]

It changes to this: [THIS IS A TEST- ] after I press Space

I see the dash suggested by the autocorrect bar. I choose to remove the prediction. Nothing happens.
