The data that is collected and pushed to the app is for the most part the raw data. The majority of those stats aren't collected on SwiftKey servers (which is why they are gone once you reinstall and with some updates). The majority of the collection on our end is simply prediction matrices that make the keyboard customized throughout the usage.
