Custom long press maps are not currently available, but you can submit such a feature request here:

I have submitted this as a general request for iOS - I think the idea is to allow each user to customize by making special characters readily available. A work around for the standard iOS keyboard is to store characters as text replacements. Example: I have set up that if I type "

I also submitted this as a feature request. I need this to be able to type in Choctaw. Storing the characters as text replacements does not work. It looks like Swift is stripping no-width characters, so my Choctaw vowels end up not being underlined, which totally changes the meaning of the sentence. I need to be able to type A̱, a̱, et. al. which I do by typing the letter and adding "combining macron below" which is unicode 0331. In my case, I need a long press to insert *two* characters. The vowel and the combining character.

SwiftKey seems to have decided that this feature will never be implemented. As Brandon suggested, I did submit a feature request (296875) only to have SwiftKey delete it the following day.
